This Cauliflower Mushroom Ceviche is a refreshing and vibrant dish, combining fresh vegetables with a tangy dressing, perfect as a light appetizer or side for your next meal.
INGREDIENTS

Cauliflower | 2/3 head | core removed and sliced thinly |
Cremini Mushrooms | 1 1/3 cup | stem removed and sliced thinly |
Red Onion | 2/3 | sliced thinly |
Red Pepper Flakes | 1 tbsp | |
Red Wine Vinegar | 1/3 cup | |
Olive Oil | 1 1/3 tbsp | |
Salt | ||
Pepper |
PREPARATION
- Combine cauliflower, mushrooms and onions in a bowl and pour vinegar over the top.
- Toss and set aside for 20+ minutes.
- Add chili flakes and olive oil and season with salt & pepper before serving.
