Cauliflower Mashers are a creamy, flavorful alternative to traditional mashed potatoes, combining tender cauliflower, garlic, and potato skins for a delightful side dish perfect for any meal.
INGREDIENTS

PREPARATION
- Steam the cauliflower in a steaming basket over about 2 inches of boiling water for about 30 minutes, until fairly soft. Strain and set aside.
- Heat the olive oil in a frying pan and saute the garlic for about 3 minutes, stirring frequently. Remove and set aside.
- Add the potato skins to the pan and cook for about 6 minutes, until golden brown. Set aside separately.
- Transfer the cauliflower and the garlic to a food processor and add the chicken stock and salt and pepper. Puree for a couple of minutes, until very smooth.
- Add the potato skins and pulse just a few times so that the skins get incorporated but remain in shreds.
