This Butter Bean Puree is a creamy, flavorful spread made with garlic, lemon juice, and olive oil. Perfect as a dip, sandwich spread, or accompaniment to various dishes.

Butter Beans | 1 can | |
Garlic | 3 clove | |
Lemon Juice | 2 1/2 tbsp | 2.5 tbsp is about 1 lemon |
Rosemary | 1 sprig | |
Red Pepper Flakes | 1 pinch | |
Salt | 3/4 tsp | |
Olive Oil | 1/2 cup |
PREPARATION
Slice the garlic cloves.
Place them together with the olive oil into a small pot. Cook over very low heat until the garlic begins to release it’s aroma and become soft, 10 minutes. Add the rosemary sprig, pinch of chile flake and continue cooking, 2 minutes.
Drain and rinse the can of beans.
Add them to the pot with the olive oil. Stir and cook, 5 minutes. Turn off the heat, discard the rosemary sprig. Add the bean mixture, salt and lemon juice to a food processor. Process until smooth. Taste and add more salt if necessary. Serve with lamb chops, on spelt flatbreads, or spread on a sandwich.
