These Blackberry Gummies are a delightful, fruity treat made with fresh blackberries, gelatin, and maple syrup. Perfect for serving as a light dessert or a fun snack!
INGREDIENTS
Serves 4 people
Ingredient | Quantity | Notes |
Gelatin | 1/4 cup | grass-fed |
Gelatin | 1 tbsp | grass-fed |
Blackberries | 2 cup | a 10oz bag is about a cup |
Lemon Juice | 1/3 cup | or lime juice, 4-5 large lemons is equal to 2/3 cup of lemon juice |
Maple Syrup | 3 tbsp |
PREPARATION
You can use cute silicon molds, or simply pour the mixture into a sheet pan, let it cool and cut into small squares.
The variations are endless- try blueberries, raspberries, and add ginger or other citrus and fruit juices!
- Pour ½ cup water into bowl and sprinkle gelatin on top. Allow the gelatin to bloom while you work on the rest of the steps.
- Add blackberries and citrus juice to a blender and blend on high for 30 seconds.
- Pour blackberry puree through a sieve to catch most of the seeds, or if you like the texture of seeds skip this step.
- Pour into a large saucepan on medium heat.
- Add the maple syrup, bloomed gelatin, and whisk the mixture for 5 minutes, until there are no lumps and the mixture is quite warm but NOT boiling.
- Pour into silicone molds or baking dish. Allow to come to room temperature, then cover in plastic wrap and place in fridge to firm up.
- If you used a small baking dish as a receptacle, cut into bite-size squares or simply pop them out of their molds!
