Description
These bison bites are enhanced with a spicy chipotle raspberry glaze, combining the rich flavor of ground bison with the sweetness of raspberries for a delicious appetizer or main dish.
INGREDIENTS

Collard Greens | 1/2 cup | chiffonade, about 2 large leaves |
Ginger | 2 tbsp | scant tbsp |

Egg | 4 | whisked |
Tamari | 2 tbsp | |
Fish Sauce | 2 tbsp | |
Salt | to taste | |
Olive Oil | or ghee | |
Raspberries | 1 cup | |
Chipotle Chiles | 2 | in adobo, chopped |
Raspberry Jam | 4 tbsp | 100% fruit |
PREPARATION
- Mix all bison ingredients in a large bowl. Gently squish the meat to combine with veggies and be careful not to overwork.
- Form into patties about the size of your palm.
- Heat olive oil in a skillet to medium high. Add patties and cook for 3-5 minutes or until nicely browned, and flip to cook another 3 minutes. Be careful not to overcook as bison is a very lean meat that cooks faster than beef.
- In a saucepan, simmer raspberries, chipotle, and jam with a pinch of salt on medium high heat for 10-15 minutes until the berries have turned into a thick sauce.
- Add a dollop of raspberry chipotle to each bison bite and enjoy!
