Cabbage | 4/7 head | napa or savoy |
Egg | 1 1/7 | |
White Onion | 4/7 | diced |
Garlic | 2 2/7 clove | minced |

Ground Flax Seeds | 1/7 cup | |
Salt | 2/7 tsp | or to taste |
Pepper | several grinds | |
Marinara | 3 3/7 cup |
PREPARATION
- Prepare cabbage leaves. Remove stems and steam in a steaming basket over about 2 inches of boiling water for 5 minutes, then remove leaves and dunk into bath of ice water. Strain and set aside.
- Mix beef, liver (optional), eggs, onion, garlic, parsley, flax and salt & pepper. Once well combined, scoop about 1/2 cup of mixture at a time and press into the center of center of each cabbage leaf. Fold in sides of cabbage leaf and then roll lengthwise like a burrito. Set aside until all are assembled.
- Heat marinara in a wide, heavy-bottomed saucepan and arrange stuffed cabbage leaves inside. Cover and cook on low for about 25 minutes, until meat is cooked all the way through and cabbage leaves are tender.
- Serve stuffed cabbage leaves with plenty of marinara spooned on top.
SUGGESTIONS
- Beef liver adds a distinctive earthy flavor and adds extra nutrients, but can easily be left out if you prefer not to eat it.
