Description
This Basil Lime Ginger Chicken recipe features marinated chicken legs infused with fresh herbs and spices, roasted to perfection, and served on a vibrant bed of arugula and mango.
INGREDIENTS

Basil | 1 bunch | leaves |
Cilantro | 1 bunch | leaves and stems |
Green Apple | 1 | core removed |
Scallions | 3 | |
Coconut Vinegar | 2 tsp | or rice vinegar |
Ginger | 1 | finger-sized knob |
Fish Sauce | 2 tsp | |
Lime Zest | 4 tbsp | |
Salt | 1 | generous pinch |
Red Chili Flakes | 1 | optional, generous pinch |
Whole Chicken Legs | 7 | large |
Ghee | 1 tbsp | |
Salt | ||
Arugula | 2 cup | |
Mango | 1/2 | diced |
Lime Juice | 1 tbsp |
PREPARATION
- Place all ingredients except chicken in blender, and blend marinade until smooth.
- Add chicken to a gallon-size ziplock bag, and pour marinade over chicken. Zip bag and massage marinade into chicken for at least one minute.
- Allow to marinate for at least one hour, up to 12 hours.
- Preheat oven to 425 °F (218 °C) (or 400 °F (205°C) for convection).
- Let excess marinade drip off chicken, and lay flat on sheet pan, skin side up.
- Using two fingers, separate the skin from the flesh and add ghee in between.
- Sprinkle generously with salt.
- Place in oven for 45 minutes.
- Splash the beautifully browned chicken with lime juice.
- Serve on a bed of arugula, lime & mango.
