Description
This beet soup is a creamy and flavorful dish made with fresh beets, coconut milk, and aromatic spices, perfect for a warm and comforting meal that serves four.
INGREDIENTS
Serves 4 people

Beets | 1 1/3 | large, chopped |
Bone Broth | 2 2/3 cup | |
Coconut Milk | 1/3 can | |
Garlic | 2 2/3 clove | finely chopped |
Ginger | 1 inch | finely chopped |
Labne | 1/6 cup | |
Mint | 1/6 cup | chopped |
Nutmeg | 2/3 tsp | |
Olive Oil | 1 1/3 tbsp | |
Yellow Onion | 1/3 | chopped |
Salt | 1/6 tsp | |
Shallots | 2/3 | small, finely chopped |
PREPARATION
- Saute onion and shallot for 5 minutes
- Add garlic and ginger and saute for another 5 minutes with salt and nutmeg
- Add beets and bone broth, increase heat and bring to a boil
- Reduce heat and simmer for 20 minutes
- Add coconut milk, labne, mint and more salt and pepper if needed
- Take off heat and puree until all chunks are gone and soup is smooth
SUGGESTIONS
- I drizzled a little extra labne on top and sprinkled black pepper and minced mint on top for garnish and extra flavor
- As with all soups I enjoy this beet soup with bread so I can sop up every last drop
